How much meatloaf is a serving? Half!

Well, in my house at least.

Wifey made this one with spinach, red peppers and flax seeds instead of panko or breadcrumbs. Secret ingredient? Cinnamon.

Shredded spinach on the side with pure liquified ginger as a dressing.

Pork Chops

Cover pan with foil. Spray olive oil on bottom. Season both sides of thawed, trimmed pork with salt, pepper, and garlic powder. Add small-cut veggies of choice, re-season, spray lightly with olive or coconut oil.

Seal foil into packet by adding another later to the top. Cook at 350 for two hours or a little less if using thin-cut chops.

No steak knife required. These are fork-tender and delicious.

FYI: I went with bell peppers, carrots, red onion, and button mushrooms.

One time I was in desperate need to hit the grocery store and was out of almost everything. All I had was jasmine rice and eggs, so that became my oddball lunch combination. Today it's one of my favorite quick meals. Runny yolks for the win.

Steak at home, no grill required.

This is how they often do in fancier restaurants: seared and finished in oven with an herbed butter sauce.
