Apple Cinnamon Muffins
1/2 stick melted butter
2 riped bananas smashed
1 tsp vanilla
1/8 cup of splenda
1/4 cup sifted coconut flour
3/4 cup almond flour
1/2 tsp baking soda
1 apple, sliced and diced
1 1/2 tsp cinnamon
3 eggs
Preheat oven to 370 F. Mix butter, eggs, bananas, vanilla, and splenda together. In a separate bowl, mix coconut flour, almond flour, baking soda, and cinnamon together. Add diced apples to wet mixture. Combine mixtures together. Pour into greased muffin pan. Bake for 15 to 20 minutes.
